Which would be faster: 3xCA with B25+B41+B41 or 3xCA with B41+B41+B41

All else equal, which would be faster: 3xCA with B25+B41+B41 or 3xCA with B41+B41+B41? Would the answer be the same with more channels? 5G modems should be spec'd to handle much greater CA, like 16 channels, so I'm wondering, would the same apply for 16xCA? This is assuming a clear LOS to a single nearby tower that transmits both bands.

If you're assuming ideal circumstances, I believe B41 can carry more than B25. That being said, you're less likely to get full capacity on B41 because lots of people are usually on that band. Less people would typically be on 25.
In my area, I have available 41 and 25, but the 25 solo always carried more throughput for me than any 41 ever did.
