Agree with MattB29, this looks like a SIM issue, for now. Check that you have it properly inserted. If you are using an adapter, like the Noosy, make sure you have it properly aligned in the adapter and very carefully insert it. They are prone to get loose in the adapter as you insert into the modem...

Yes, you could replace the modem card in the Mofi, I don't know if the Mofi firmware would continue to work. I flashed my Mofi with the Goldenorb version for the WE826, just to experiment a bit. I practically begged Verizon to sell me their Home LTE service, but they would not. The tower is 1.25 miles from my house, and my neighbor has it and it works great. They could not provide a reason for not selling it to me, just a list of potential reasons. Very frustrating company to deal with.

I will definitely try to get the tablet plan soon but for now I got the 100gb hotspot plan for $55/month. I finally got this setup working and the next step is getting the antennas figured out. I will also look into Verizon so that I get better coverage. Thank you a lot for the tip. Glad you got it...

Are you band locking? On the Sim 7 you would generally want to band lock. It looks like B66 is going to be your best bet, but the only way to know for sure is to band lock each one and run speed tests until you figure out which band gives the most consistent and highest speeds.
