Maybe they meant a 100x increase in signal strength? That would be 20dbm, which I think could be possible. Like I said before, forget the signal booster and just setup a connection for your internet, and use wifi calling. The problem with high gain antennas is they are very directional. If you don't...

If you are really serious about your network, then I would highly recommend running separate dedicated access point(s) and a dedicated router/4G modem. Your problem is the AUX connector port (RXD) on the EM7565. This is most likely due to the MHF4 pigtail connector has popped off, or is connected to the GPS port as opposed to the AUX.

You are off to a good start.

Band 2 signal stats show it to be practically unusable.

Quality signals are a necessity when using cellular service as a source for internet.

The weather can certainly impact signals.

With no other changes, I agree its likely a change on your tower (weather or some other damage likely). You can call in a trouble ticket for it and have your tower checked. Ive never done it myself, but Ive heward of people getting things checked out that way.
